This straightforward recipe uses just three components to create festive witch's hat sausage rolls. By shaping ready-rolled pastry and sausage meat into pointed hats and adding decorative touches, you can whip up a delicious snack in under an hour.   1. Lay out the 375g sheet of ready-rolled lighter shortcrust pastry on your work surface. Slice it down the middle lengthwise to create two long rectangles, then cut each rectangle crosswise into four equal sections. Trim each square into a triangle shape, setting aside any leftover scraps for later use.
  2. Portion the 150g of sausage meat into eight equal balls. Shape each ball into a small log and position it at the wide base of a pastry triangle, letting the ends drape slightly over the edges. Gently wrap the pastry around the meat, leaving the top open, and use a light coating of beaten egg to secure the edges.
  3. Take the reserved pastry scraps and fashion them into decorative elements to adorn the tops of the rolls. Arrange the prepared items on a tray and refrigerate for 20 minutes. Meanwhile, heat your oven to gas mark 5, 200˚C, or 180˚C with a fan.
  4. Apply a final layer of beaten egg over the entire surface of each roll before baking. Cook for 20 to 25 minutes, or until the pastry has turned a rich golden color and feels crisp to the touch.
