These caramel apples are dipped in rich homemade caramel and rolled in crushed chocolate cookies for a delightful crunch. The caramel is made from scratch with sugar, corn syrup, butter, and heavy cream, then cooled slightly before coating the apples. Let them set on a greased baking sheet for a few minutes before serving.

  1. Push a wooden stick firmly into the top of each apple. Lightly coat a baking sheet with cooking spray.
  2. In a large pot over medium-high heat, combine the sugar and corn syrup. Stir with a wooden spoon until mixed. The mixture might clump, but don't worry—it will smooth out. Continue cooking, gently swirling the pot (avoid stirring), until the color turns dark amber and a candy thermometer reads 245°F, which should take 8 to 12 minutes.
  3. Add all the butter pieces at once and stir until fully melted and combined. Lower the heat to medium, then carefully pour in the heavy cream (the mixture will bubble up). Whisk until the caramel is smooth.
  4. Raise the heat back to medium-high and cook until the caramel reaches 250°F, about 8 to 10 minutes. Remove from heat and let it sit for 5 to 10 minutes. Dip each apple into the warm caramel, then roll in the crushed chocolate cookies. Place the coated apples on the prepared baking sheet and allow them to set for 5 to 10 minutes.
