These Deviled Eyeballs are a Halloween twist on deviled eggs, using avocado and lime for a creamy filling. The yolks are mashed with avocado, lime juice, and spices, then piled high into egg whites. Decorate with roasted red pepper veins, hot sauce, and olive pupils for a creepy effect.

  1. Remove the shells from the hard-boiled eggs, then slice each egg in half lengthwise. Scoop out the yolks and place them in a medium bowl. Arrange the egg white halves on a serving platter.
  2. Add the diced avocados and lime juice to the bowl with the yolks. Mash everything together until smooth and well combined. Stir in the salt, black pepper, and cayenne. If you like, mix in the optional grated horseradish for extra kick.
  3. Spoon a heaping tablespoon of the avocado-yolk mixture into each egg white half, mounding it high. If desired, sprinkle fresh herbs on top for garnish.
  4. To create devilish eyeballs, thinly slice roasted red peppers to form veins on the filling, or drizzle with bottled red hot sauce. Finish by placing a sliced black olive in the center of each mound to resemble a pupil.
