These easy Hocus Pocus cookies use a white cake mix base tinted lime green with gel food coloring, studded with white chocolate chips, and topped with edible candy eyes. Bake just until set to preserve the vibrant potion-like hue, then add the eyes while the cookies are still warm.

- Heat your oven to 350°F. Prepare two large baking sheets by lining them with parchment paper.
- In a medium bowl, whisk together the white cake mix and baking powder until well combined.
- In the bowl of a stand mixer (or a large bowl with a hand mixer), beat the eggs, vegetable oil, and vanilla extract together.
- Add the dry mixture to the wet ingredients and mix until just combined.
- Add 2 drops of green gel food coloring and mix thoroughly. Then fold in the white chocolate chips by hand.
- Using a 1-tablespoon scoop, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for about 9 minutes, watching closely to prevent browning—overbaking will ruin the lime green potion effect.
- Immediately after removing from the oven, press edible candy eyes onto the tops of the cookies. Be careful, they will be hot!
