These easy pumpkin tangerines make a fun and healthy Halloween snack. Simply blanch tangerines for easy peeling, then add a celery stem to each to create a mini pumpkin. Serve them in cupcake liners or on a platter for a festive, no-sugar treat.
Ingredients
Directions
- Using a metal spoon or utensil, submerge each tangerine in boiling water for about 10 to 30 seconds, gently moving them around.
- Take the tangerines out of the water. They will now be much simpler to peel, leaving no white pith behind.
- Peel every tangerine and put them aside.
- Wash the celery, then peel and cut it into small pumpkin stem shapes about 1 to 2 inches long, removing any imperfections.
- Insert a small celery piece about halfway or three-quarters of the way into the top of each tangerine so the stem stays secure. Do this for all tangerines.
- For a more realistic look, peel and curl a few thin strings from the celery stem to mimic the curly vines on a pumpkin.
- Place each finished tangerine in a fun cupcake liner to keep it separate from other treats in a lunchbox, or arrange them on a platter for a healthy Halloween snack at a potluck.
