This Halloween baked pasta features upright rigatoni tubes filled with a creamy cheese mixture, topped with a tomato-basil sauce and mozzarella. After baking, it's adorned with mozzarella-olive 'eyeballs' for a fun, festive look. A creepy yet delicious dish that's sure to delight guests.

- Boil the rigatoni in salted water until it's about 1 minute shy of the package's suggested cooking time, so the tubes remain firm enough to stand upright.
- Drain the pasta and rinse it under cold water. Toss with 1 tablespoon of olive oil to keep the pieces from sticking together.
- Use your hands to arrange each rigatoni tube upright in the pan, forming a single layer that covers the entire bottom.
- In a bowl, combine cream cheese, ricotta cheese, and additional cream cheese, then mix well.
- Spread the cheese mixture over the standing pasta with a spatula, making sure it gets into the hollow centers of the rigatoni.
- In another bowl, stir together the grated tomato, salt, pepper, and basil until evenly blended, then drizzle this over the pasta.
- Finish by sprinkling the shredded mozzarella on top.
- Bake in an oven preheated to 400°F for 15 to 20 minutes.
- Use a round mold to cut small circles from the mozzarella slices.
- Place a black olive slice on each mozzarella circle, then position these 'eyeballs' on top of the baked pasta.
