These Halloween deviled eggs are dyed a dark, eerie green using food coloring, then filled with a flavorful yolk mixture made with chimichurri or pesto. The result is a festive and tasty appetizer perfect for any Halloween gathering.

  1. Put the eggs in a large saucepan and pour in cold water until it's about 2 inches above the eggs. Bring to a boil, then take the pan off the heat, cover it, and let it sit for 12 minutes. Drain the eggs and return them to the pan. Shake the pan gently to crack the egg shells all over.
  2. In a large bowl, add 4 drops of food coloring and fill halfway with water. Add more food coloring until the water is very dark. Place the cracked eggs in the bowl, adding more water if needed to cover them. Refrigerate for at least 2 hours, up to 6 hours.
  3. Drain the eggs, rinse under cool water, and peel them. Cut each egg in half lengthwise. Scoop out the yolks into a small bowl.
  4. To the yolks, add mayonnaise, chimichurri or pesto, lemon juice, and 1/8 teaspoon each of salt and pepper. Mix well. Spoon the mixture back into the egg white halves. If desired, dust with smoked or regular paprika.
