This Halloween deviled egg recipe uses ripe avocado and dill relish for a creamy filling, enhanced with red food coloring and a paintbrush to create realistic bloodshot eyes. Topped with black olive slices, these spooky snacks are best kept chilled and served within six hours.

  1. Peel the hard-boiled eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a mixing bowl.
  2. Combine the egg yolks, ripe avocado, dill relish, and lemon juice in the bowl. Mash everything together until smooth; if your avocado isn't very soft, a food processor will help achieve a creamy texture.
  3. Check the consistency of the filling. If it needs to be creamier, stir in mayonnaise one teaspoon at a time until you reach your preferred richness.
  4. Season the mixture with salt and pepper to taste.
  5. Place a small amount of red food coloring onto a spoon. Dip a clean, soft paintbrush into the color and gently paint tiny red dots onto the egg whites to create bloodshot eyes.
  6. Fill the egg halves with the avocado mixture and place a slice of black olive on top for the pupil. Keep the eggs chilled in the refrigerator until serving time, aiming to enjoy them within six hours for the best quality.
