These Halloween eyeball cookies use a simple cake mix base and are decorated with candy melts and chocolate chips to create creepy but cute eyeballs. The cookies come together quickly and are perfect for a fun baking project with kids.

  1. Set your oven to 350°F to preheat.
  2. In a large bowl, combine the cake mix, eggs, melted butter, and peanut butter. Mix everything together until a smooth dough forms.
  3. Using a standard cookie scoop (about 1.5 tablespoons), portion the dough and roll it into balls. Coat each ball in granulated sugar, then place on a parchment-lined baking sheet. Gently flatten each ball a bit.
  4. Bake the cookies for approximately 10 minutes, or until the edges are firm and the tops show cracks. Take them out of the oven.
  5. Right after removing the cookies from the oven, insert the red candy melts as the first eye layer. Tilt one red candy melt at an angle and press it into a cookie, then flatten the other side and wiggle gently so it sits just below the cookie's surface. Repeat for all cookies on the tray.
  6. Return to the first cookie and add a white candy melt on top of the red one. Hold the white melt at an angle and press it into the still-soft red candy. Push down and wiggle so the red candy edges slightly overlap the white candy.
  7. Put the tray back into the warm oven for 90 seconds to get the white candy melty. Then, press a chocolate chip (flat side up) into the center of each white candy to finish the eyeball.
  8. Repeat the process with any remaining cookies. Allow cookies to cook completely before serving.
