- Set your oven to 350°F and prepare a baking tray by lining it with parchment paper.
- In a medium-sized bowl, combine the flour, cocoa powder, baking soda, and kosher salt using a whisk.
- In a separate large bowl, beat the room-temperature butter, granulated sugar, egg, and vanilla extract on medium speed for at least 3 minutes until the mixture becomes smooth and creamy, scraping the sides as necessary.
- Gradually incorporate the dry mixture into the wet ingredients, mixing only until combined. Then, fold in the plain M&M's, saving a handful for decoration.
- Cover the bowl and chill the dough in the refrigerator for at least 1 hour.
- Scoop out 2-tablespoon portions of dough and shape them into balls. Arrange them on the prepared tray, ensuring they are spaced at least 2 inches apart. Press the reserved M&M's onto the tops if desired.
- Bake the cookies for 12 to 14 minutes.
