These Halloween mummy meatballs are made by wrapping seasoned meatballs in fettuccine noodles, then baking them in marinara sauce. Finished with ricotta cheese and olive eyes, they make a fun and tasty main dish. Serve them warm for a crowd-pleasing spooky dinner.
Ingredients
Directions
- Preheat the oven to 375°F (190°C). If using a meatball mixture, shape it into 24 meatballs, each about 2 tablespoons in size.
- Cook the fettuccine noodles according to package directions until al dente, then drain and let cool slightly.
- Wrap 2 cooked fettuccine noodles around each meatball, tucking the ends into each other to secure. Spread the marinara sauce in an 8-inch (20 cm) baking dish and arrange the wrapped meatballs on top.
- Bake for 15 minutes, until the meatballs are cooked through and the pasta begins to crisp slightly.
- Place the ricotta in a resealable plastic bag and snip a small corner. Pipe 2 small dollops of ricotta onto each meatball, then place a piece of black olive in the center of each dollop to create eyes.
- Serve immediately, or keep warm in a 200°F (95°C) oven until ready to serve.
