Made with Greek yogurt, pumpkin, and whole wheat flour, these muffins are a nutritious twist on a classic treat. The batter comes together quickly, and the addition of mini chocolate chips provides a hint of sweetness. Bake them at 400°F for just 15-17 minutes for a perfect fall snack.

Ingredients

Directions

  1. In a medium bowl, combine the Greek yogurt, pumpkin puree, eggs, brown sugar, and vanilla extract. Whisk until smooth.
  2. In another bowl, whisk together the whole wheat flour, rolled oats, pumpkin pie spice, salt, baking soda, and baking powder.
  3. Pour the wet mixture into the dry mixture and stir with a rubber spatula until just incorporated. Be careful not to overmix.
  4. Gently fold in the mini chocolate chips.
  5. Line a 12-cup muffin pan with parchment paper liners. If using standard paper liners, spray them with nonstick cooking spray to prevent sticking.
  6. Divide the batter evenly among the muffin cups; they will be quite full.
  7. Sprinkle a few extra mini chocolate chips on top of each muffin.
  8. Bake at 400°F for 15 to 17 minutes, or until a toothpick inserted into the center comes out clean.
