Made with Greek yogurt, pumpkin, and whole wheat flour, these muffins are a nutritious twist on a classic treat. The batter comes together quickly, and the addition of mini chocolate chips provides a hint of sweetness. Bake them at 400°F for just 15-17 minutes for a perfect fall snack.
Ingredients
Directions
- In a medium bowl, combine the Greek yogurt, pumpkin puree, eggs, brown sugar, and vanilla extract. Whisk until smooth.
- In another bowl, whisk together the whole wheat flour, rolled oats, pumpkin pie spice, salt, baking soda, and baking powder.
- Pour the wet mixture into the dry mixture and stir with a rubber spatula until just incorporated. Be careful not to overmix.
- Gently fold in the mini chocolate chips.
- Line a 12-cup muffin pan with parchment paper liners. If using standard paper liners, spray them with nonstick cooking spray to prevent sticking.
- Divide the batter evenly among the muffin cups; they will be quite full.
- Sprinkle a few extra mini chocolate chips on top of each muffin.
- Bake at 400°F for 15 to 17 minutes, or until a toothpick inserted into the center comes out clean.
