- In a medium bowl, mix together the Greek yogurt, pumpkin puree, eggs, brown sugar, and vanilla extract until well combined.
- In a separate bowl, stir together the whole wheat flour, rolled oats, pumpkin pie spice, salt, baking soda, and baking powder.
- Pour the wet mixture into the dry ingredients and fold with a rubber spatula until just combined—be careful not to overmix.
- Gently fold in the mini chocolate chips.
- Line a 12-cup muffin tin with parchment paper liners (or use regular liners sprayed with cooking spray to prevent sticking).
- Divide the batter evenly among the cups; the muffins will be large.
- Sprinkle a few extra mini chocolate chips on top of each muffin.
- Bake at 400°F for 15–17 minutes, or until a toothpick inserted into the center comes out clean.
