Healthy Tropical Candy Corn Ice Pops
Layers of creamy coconut, tangy pineapple, and sweet peach create a healthy Halloween treat that looks like candy corn.

These tropical ice pops mimic the iconic candy corn colors using only natural ingredients. With a base of stevia-sweetened coconut milk, a middle layer of pureed pineapple, and a top of peach-orange puree, they’re a refreshing, sugar-free Halloween snack. Simply layer and freeze each section before adding the next, then unmold with warm water.

- Add about 5 drops of liquid stevia to the coconut milk, adjusting to your desired sweetness. Pour the mixture into ice pop molds or small paper cups, filling them about one-third full. Insert popsicle sticks, cover with the mold lid or plastic wrap, and freeze until completely solid.
- In a blender, puree the frozen pineapple with just enough water to create a thick, smooth consistency. Pour this puree over the frozen coconut layer, filling the molds to the two-thirds mark. Return to the freezer and freeze until solid.
- Blend the frozen peaches with enough orange juice (up to 1/2 cup) to make a smooth puree. Pour this mixture into the molds to fill them completely. Freeze until fully set.
- To remove the pops, briefly run the molds under warm water (collect the water for other uses like watering plants). Gently pull out the pops and enjoy.
