This Halloween sushi brain uses avocado, cream cheese, and seasoned rice as a base, then gets covered with smoked salmon rolls to look like a real brain. Red tobiko fills the center groove for an extra gory touch. It's a spooky, savory appetizer that will shock and impress your guests.

  1. Cut your avocado in half lengthwise, remove the pit, and carefully peel off the skin. Form two small cream cheese balls and press one into the hollow where the pit was.
  2. Fill the other avocado half with cream cheese.
  3. Press the two avocado halves back together so the cream cheese acts as glue.
  4. Mold cooled, seasoned sushi rice around the avocado to form a brain-like shape, making sure to leave a groove down the center.
  5. Cut smoked salmon into thin slices and roll each piece into a random, irregular shape.
  6. Attach each salmon roll to the rice in a wavy, squiggly pattern to mimic brain texture. Work quickly with clean, cool hands for best results.
  7. Cover all the sides with salmon rolls, but keep the center groove exposed. Press plastic wrap tightly around the brain to compact the salmon and conceal any visible rice.
  8. Take off the plastic wrap and gently spoon red tobiko (flying fish roe) into the center groove of the brain.
