These Jack O' Lantern Cheese Quesadillas are a festive twist on a classic snack. A carved tortilla top reveals melted cheese inside, with a bell pepper stem for a cute finish. Ready in under 10 minutes, they're perfect for Halloween parties or a quick themed meal.

- Start by heating your oven to 375°F.
- Put one tortilla on a cutting board. Use a sharp paring knife to cut out a jack-o'-lantern face; it doesn't have to be flawless, but avoid ripping the tortilla. Remove the cut shapes and keep them for later.
- Set a whole tortilla on a baking sheet. Sprinkle the shredded cheese mixture evenly over it, then top with the carved tortilla.
- Bake for about 5 minutes, or until the tortillas are lightly golden and the cheese has melted. For extra crispiness, switch the oven to broil for 1–2 more minutes, keeping a close eye to avoid burning.
- Take the quesadilla out of the oven. Slide a slice of green bell pepper in between the two tortillas at the top to create a stem.
- Serve immediately with your favorite dips like salsa, sour cream, or guacamole. These quesadillas also pair nicely with tomato soup.
