Last-Minute Halloween Recipe: Deviled Eyeballs
PHOTO · LACOCINADELESLIE.COM

This last-minute Halloween recipe transforms ordinary deviled eggs into creepy eyeballs using avocado, lime, and spices. The creamy filling is mounded high on egg whites, then decorated with red pepper 'veins' or hot sauce and black olive pupils. It's a quick, festive appetizer that looks ghoulish but tastes great.

Ingredients

Directions

  1. Peel all 8 hard-boiled eggs, then slice them in half lengthwise. Scoop out the yolks into a medium bowl and set the egg white halves on a serving platter.
  2. Add the diced avocados and lime juice to the yolks. Mash everything together until smooth, then mix in salt, black pepper, and cayenne. If you like, stir in 1 tablespoon of drained grated horseradish for extra zing.
  3. Scoop a heaping tablespoon of the avocado-yolk mixture into each egg white half, mounding it high. Optionally, sprinkle with herbs.
  4. To create the devilish eyeballs, thinly slice roasted red peppers to form veins on the filling, or drizzle bottled red hot sauce over the top. Finish each eyeball with a sliced black olive.
