These Monster Eye Donuts use just five ingredients: brownie mix, egg, milk, dark chocolate, and candy eyes. After shaping the dough into donuts and baking, they're dipped in melted chocolate and topped with candy eyes for a fun Halloween snack.

  1. Set the oven to 350°F and line a 9x13 inch ceramic baking dish with parchment paper.
  2. In a medium bowl, stir together 250 grams of brownie mix, 1 large egg, and 3-4 tablespoons of milk until well combined.
  3. Using your hands, knead the mixture until it forms a dough.
  4. Pinch off a small piece of dough and roll it into a log shape.
  5. Bring the ends of the log together and gently press to seal, forming a donut shape. Alternatively, you can use a non-stick donut mold.
  6. Repeat with the remaining dough to create as many donuts as possible.
  7. Place the shaped donuts into the prepared baking dish.
  8. Bake the donuts in the preheated oven for 10-15 minutes.
  9. Let the donuts cool completely at room temperature. While they cool, melt 1 cup of dark chocolate (chunks or chips).
  10. In a microwave-safe bowl, combine the chocolate with 2 tablespoons of coconut oil and heat in 30-second bursts, stirring between each, until smooth and creamy.
  11. Dip one side of each cooled donut into the melted chocolate, then return it to the baking dish or a wire rack.
  12. Repeat the dipping process with all remaining donuts.
  13. Press candy eyes onto the chocolate coating for a spooky Halloween look. Serve and enjoy!
