These monster eyeball cookie pops are a fun and creepy treat for Halloween. Made with a chewy chocolate chip cookie dough and topped with candy eyeballs, they're served on lollipop sticks for easy handling. The recipe yields about 10 pops and bakes in under 15 minutes.

- Set your oven to 350°F and lay a piece of parchment paper on a baking sheet.
- Whisk together cake flour, all-purpose flour, baking soda, baking powder, and Kosher salt in a large bowl.
- In another bowl, beat the softened butter with both brown and granulated sugars until creamy.
- Add the egg and vanilla extract, mixing thoroughly until incorporated.
- Gradually mix the dry ingredients into the wet mixture.
- Fold in the dark chocolate chips until evenly distributed.
- Scoop up 3 tablespoons of dough, shape into a ball, and place 4 balls on the sheet, two at each end, offset so that lollipop sticks won’t bump into each other.
- Push a lollipop stick about three-quarters of the way into each dough ball.
- Bake for 13 to 15 minutes, until the edges just start to turn golden and the centers are set.
- Take the pan out and set it on a wire rack. Use the side of a spatula to nudge any cookies that have spread out of shape back into round.
- While the cookies are still hot, press candy eyeballs into them.
- Let them rest for 5 minutes, then transfer to a cooling rack to cool completely.
