This recipe creates 12 to 14 pumpkin cheesecake truffle mummies using gingersnap crumbs, pumpkin puree, graham cracker crumbs, powdered sugar, cinnamon, salt, and cream cheese.   1. In a large mixing bowl, combine the gingersnap cookie crumbs, pumpkin puree, graham cracker crumbs, powdered sugar, ground cinnamon, salt, and softened cream cheese. Stir the ingredients together until the mixture becomes smooth and uniform. Next, melt half of the white chocolate chips and fold them into the truffle mixture.
  2. Cover the bowl and refrigerate the mixture until it firms up enough to handle, which takes approximately one hour in the refrigerator or thirty minutes in the freezer. Once the dough is cold and solid, shape it into 12 to 14 equal-sized balls. Insert a toothpick into the center of each ball to use as a handle.
  3. Melt the remaining white chocolate chips or white dipping chocolate in a small microwave-safe bowl. Holding each truffle ball by the toothpick, dip it completely into the melted chocolate to ensure full coverage. Allow any extra chocolate to drip off before placing the coated truffles onto a baking sheet or plate lined with wax paper, parchment paper, or aluminum foil. Refrigerate for 3 to 5 minutes to let the chocolate set.
  4. Drizzle additional melted white chocolate over the hardened truffles to create a mummy-like appearance. Dip the tip of a Q-tip into the red food coloring and gently dab two small dots onto each truffle to form eyes. Be careful not to touch the truffles after adding the eyes to avoid smudging.
