Pumpkin Quesadilla Recipe

These pumpkin quesadillas are a fun Halloween treat. You carve a face into flatbread, fill with cheese, and bake until the cheese pushes through the cuts. Serve six as a festive snack or appetizer.

Directions
- Set your oven to 425°F and let it preheat.
- Using a sharp paring knife, carve a jack-o'-lantern face into one side of each flatbread. Set aside the larger cutout pieces to use as stems if you like.
- Place a layer of Monterey Jack or mozzarella cheese on the uncarved side of each flatbread, then top with cheddar. Fold the flatbread so the cheddar face is visible. Bake for 3 to 5 minutes. Remove from the oven and gently press on the face area to let melted cheese ooze through the cutouts. Serves six.
