These Pumpkin Rice Krispie Treats are a fun Halloween twist on the classic dessert. You'll tint the marshmallow mixture orange, shape them into pumpkins, add a pretzel stick for the stem, and top with a fondant leaf made using a silicone mold. They're perfect for parties and easy to store.
Ingredients
Directions
- Prepare the classic Rice Krispies treats by melting 3 tablespoons of butter in a large pot over low heat. Add one 10-ounce package of Jet-Puffed marshmallows (or 5 1/2 cups of mini marshmallows) and stir until completely melted. Remove from heat and stir in orange food coloring until the mixture reaches your desired shade of orange. Then add 6 cups of Rice Krispies cereal and mix well.
- Line a baking sheet with parchment paper.
- Rub your hands generously with vegetable oil or melted coconut oil to prevent sticking. Repeat this step for each pumpkin you shape.
- Take portions of the warm mixture and roll them into rounded pumpkin shapes. Place each shaped pumpkin on the parchment-lined baking sheet.
- While the Rice Krispies treats are still warm, gently press a pretzel stick into the center of each pumpkin to form the stem.
- On a clean work surface, roll out a piece of green fondant to roughly the same size and shape as the cavity in your silicone leaf mold.
- Press the rolled fondant firmly into the leaf mold, ensuring it fills the entire cavity. Use a spatula and your fingers to trim away any excess fondant from the top.
- Flex the silicone leaf mold to release the fondant leaf shape.
- Gently place one fondant leaf on the side of each pretzel stick on each pumpkin.
- Store the finished pumpkin Rice Krispies treats in individual plastic bags or an airtight container until serving.
