Pumpkin Spice Hot Honey Brie Bites are a perfect fall appetizer, featuring flaky puff pastry filled with a spiced pumpkin mixture and topped with brie, pecans, and hot honey. They bake quickly and are sure to impress at any gathering.

- Place a rack in the middle of the oven and set it to 400°F. Use cooking spray to lightly coat a 24-cup mini muffin tin.
- Slice the puff pastry sheet into 24 rectangles, arranging them in a 6 by 4 grid. Gently press each rectangle into the bottom and up the sides of the greased muffin cups.
- In a medium bowl, combine pumpkin puree, heavy cream, hot honey, salt, and pumpkin pie spice. Using a hand mixer on medium-high, beat until the mixture becomes light and fluffy, which should take about 1 minute.
- Spoon about 2 teaspoons of the pumpkin filling into each pastry cup. Place one cube of Brie on top of each.
- Bake the bites for 10 to 12 minutes, until the pastry edges are deep golden brown and the Brie appears glossy. Let them cool in the tin for 5 minutes.
- Move the bites to a serving platter. Sprinkle with chopped pecans and fresh thyme, then drizzle extra hot honey on top.
