These Rice Krispies Brains are a fun and easy Halloween dessert made with crispy rice cereal, marshmallows, and red food coloring. Shape the mixture into brain-like mounds, add a center indent, and paint on bloody streaks for a gruesome effect. They store well for up to a week, making them perfect for parties.

  1. Prepare a large baking sheet by lining it with parchment paper or a silicone baking mat. Set aside.
  2. Measure 5 cups (132g) of Rice Krispies cereal into a large bowl and set aside.
  3. In a large saucepan, melt ¼ cup (57g) unsalted butter over low heat. Add the entire 10-oz bag (283g) of mini marshmallows and stir until completely melted. Remove from heat and stir in red food coloring to your desired shade (about 6 drops gives a pinkish hue; color will lighten when mixed with cereal).
  4. Pour the melted marshmallow mixture over the Rice Krispies and stir until all cereal is evenly coated.
  5. Using an ice cream scoop or ¼ cup measure sprayed with non-stick spray, scoop a portion of the mixture and gently press it into the scoop, then drop onto the prepared baking sheet. With your hands, shape each mound into a slightly oblong circle to resemble a brain.
  6. Use the handle of a butter knife to press an indent down the center of each brain. Then, using the non-blade side of the knife and your free hand, gently push the two halves closer together to create the brain's crevice.
  7. If desired, put a few drops of red food coloring in a small bowl and use a paintbrush to paint streaks of "blood" onto the brains. Let them cool and set completely before serving. Store in an airtight container for up to one week.
