These Rice Krispies Brains are a fun and easy Halloween dessert made with crispy rice cereal, marshmallows, and red food coloring. Shape the mixture into brain-like mounds, add a center indent, and paint on bloody streaks for a gruesome effect. They store well for up to a week, making them perfect for parties.
Ingredients
Directions
- Prepare a large baking sheet by lining it with parchment paper or a silicone baking mat. Set aside.
- Measure 5 cups (132g) of Rice Krispies cereal into a large bowl and set aside.
- In a large saucepan, melt ¼ cup (57g) unsalted butter over low heat. Add the entire 10-oz bag (283g) of mini marshmallows and stir until completely melted. Remove from heat and stir in red food coloring to your desired shade (about 6 drops gives a pinkish hue; color will lighten when mixed with cereal).
- Pour the melted marshmallow mixture over the Rice Krispies and stir until all cereal is evenly coated.
- Using an ice cream scoop or ¼ cup measure sprayed with non-stick spray, scoop a portion of the mixture and gently press it into the scoop, then drop onto the prepared baking sheet. With your hands, shape each mound into a slightly oblong circle to resemble a brain.
- Use the handle of a butter knife to press an indent down the center of each brain. Then, using the non-blade side of the knife and your free hand, gently push the two halves closer together to create the brain's crevice.
- If desired, put a few drops of red food coloring in a small bowl and use a paintbrush to paint streaks of "blood" onto the brains. Let them cool and set completely before serving. Store in an airtight container for up to one week.
