Delicata squash is cut into thin sticks, tossed with olive oil and smoked paprika, then roasted at high heat until tender and caramelized. The process is simple and quick, making for a delicious side dish or snack. Serve with your favorite dipping sauce for extra flavor.

- Set your oven to 425°F. Cover two rimmed baking sheets with parchment paper or silicone baking mats.
- Trim the ends from each squash. Slice each one in half crosswise, then cut each half lengthwise. Remove the seeds and stringy parts.
- Slice each quarter lengthwise into sticks roughly 1/4 inch thick.
- Drizzle about 1 teaspoon of olive oil on each baking sheet. Spread the squash sticks in a single layer across both sheets. Add a bit more oil on top. Sprinkle each sheet with 1/4 teaspoon smoked paprika, some black pepper, and a pinch of salt.
- Put one sheet on the upper oven rack and one on the lower. Roast for 11 minutes, then flip the sticks using a spatula. Swap the sheets' positions and continue roasting for 10–13 more minutes, until golden and easily pierced with a fork.
- Enjoy with a dipping sauce like creamy maple mustard, honey, ketchup, or any other favorite.
