These sloppy worm sandwiches use salchichas cut into strips to mimic wiggly worms, simmered with tomatoes, onions, and BBQ sauce for a savory-sweet filling. Serve on toasted buns with mayo or crema for a festive, family-friendly Halloween meal.

- Slice each salchicha lengthwise into four equal strips.
- Warm 2 tablespoons of vegetable oil in a large skillet over medium heat.
- Add the salchicha strips and cook them until they start to turn golden brown.
- Mix in the chopped tomato, onion, and serrano chilies (optional; for milder flavor, use chopped green bell peppers instead of serranos). Then pour in the 1-1/2 cups of BBQ sauce and stir gently.
- Turn the heat down to low, cover the skillet, and let it simmer until the salchichas become soft and bend easily.
- Toast the hot dog buns, spread with mayonnaise or Mexican crema, and spoon the sloppy worm mixture onto each bun. Top with shredded lettuce if desired.
