These three-ingredient pumpkin cookies are incredibly easy to make. Mix pumpkin puree, sugar, and flour, then shape and bake for a quick fall treat. Perfect for when you need a simple dessert without a lot of fuss.

- Heat your oven to 350°F and line a baking sheet with parchment paper or a silicone mat.
- In a bowl, combine the pumpkin puree, sugar, and flour until a dough forms.
- Using a tablespoon-sized scoop, portion out the dough, roll each piece into a ball between your palms, then flatten it gently.
- Arrange the flattened cookies on the prepared baking sheet.
- Bake for 15 to 17 minutes, until the cookies are lightly browned.
- Take the cookies out of the oven and let them cool on the sheet for 5 minutes before moving them.
