- Heat your oven to 350°F. Cover a baking sheet with parchment paper or a silicone mat.
- Combine the pumpkin puree, sugar, and flour in a bowl and stir until well mixed.
- Use a tablespoon measure to scoop out dough, then roll each portion into a ball and press flat with your palm.
- Arrange the flattened cookies on the prepared baking sheet.
- Bake for 15 to 17 minutes, until the cookies are lightly browned.
- Take the sheet out of the oven and let the cookies cool on it for 5 minutes.
