- Heat your oven to 350°F. Cover a baking sheet with parchment paper or a silicone mat.
- In a bowl, combine the pumpkin puree, sugar, and flour until well mixed.
- Using a tablespoon-sized scoop, portion out the dough. Roll each portion into a ball between your palms, then flatten it gently.
- Arrange the flattened cookies on the prepared baking sheet.
- Bake for 15 to 17 minutes, until the cookies are lightly browned.
- Take the sheet out of the oven and let the cookies cool on it for 5 minutes.
