These vampire bat marshmallow pops are a fun Halloween treat. They combine marshmallows coated in dark chocolate, cookie wings, and candy eyes, finished with red gel fangs. The fangs should be added just before serving to avoid smearing.

  1. Cover two baking sheets with silicone baking mats or parchment paper.
  2. Melt the dark chocolate candy melts in a double boiler or microwave, heating in 15-30 second bursts and stirring between each.
  3. Take about 8 chocolate sandwich cookies, twist them open, scrape out the cream filling, then gently break each cookie in half to create wings.
  4. On the prepared baking sheet, place two cookie halves with the broken sides facing down and touching each other.
  5. Insert a lollipop stick into the bottom of a marshmallow lengthwise, pushing until it reaches about halfway up.
  6. Dip the marshmallow into the melted chocolate, turning to coat evenly. Let excess chocolate drip back into the bowl, then place it onto the cookie halves on the baking sheet.
  7. Press a candy eyeball onto the chocolate-coated marshmallow.
  8. Repeat steps 5-7 for the remaining marshmallows until the chocolate is used up. Allow all the pops to dry completely.
  9. Once dry, use red decorating gel to draw small fangs in a 'W' shape on each marshmallow.
  10. If you are not serving immediately or are transporting the pops, wait to add the fangs until just before serving, as the gel does not fully dry and may smear in a container.
