These easy mini Halloween pizzas start with homemade tomato sauce and crispy tortilla crusts. Decorate them with cheese cutouts and olive details to create baby ghosts, a friendly ghost, a Pac-Man ghost, a mummy, a spider, and a Jack-O'-Lantern. Bake until the cheese melts for a fun and festive treat.

  1. Put the drained tomatoes in a food processor with a steel blade. Add minced garlic, 1 tablespoon olive oil, white wine vinegar, and dried oregano. Process until smooth, about 30 seconds. Season with salt and pepper to taste. This makes 2 cups of sauce.
  2. Preheat your oven to 400°F. Line a large rimmed baking sheet with non-stick aluminum foil and set aside.
  3. Cut six circles, each 4 1/2 to 5 inches in diameter, from the flour tortillas. Brush both sides of each circle with the 2 teaspoons of olive oil. Cook them in a skillet over medium heat until golden brown on both sides, about 2 to 3 minutes per side. Place the browned tortillas on the prepared baking sheet.
  4. From one slice of mozzarella cheese, cut out three small baby ghosts. From another slice, cut out one friendly ghost. Use an egg-shaped cookie cutter to cut a Pac-Man ghost from a slice of mozzarella, then use kitchen shears to cut a zigzag pattern at the bottom. Cut thin strips from a slice of mozzarella for the mummy pizza. Cut a Jack-O'-Lantern shape from the slice of cheddar cheese.
  5. To make a spooky spider, slice a black olive in half lengthwise. Cut 8 legs from one of the olive halves. Cut 4 round eyes from the sliced black olives. Also cut 8 small eyes for the baby and friendly ghosts, and 1 smile from black olives. For the Jack-O'-Lantern, cut eyes and a mouth from scraps of mozzarella cheese.
  6. Place 2 small black olive eyes on each of the three baby ghosts. Put 2 small black olive eyes and a smile on the friendly ghost. Add 2 sliced black olives as eyes on the Pac-Man ghost. Arrange the mozzarella strips on the mummy pizza and add 2 sliced black olives for eyes. Place the mozzarella eyes and mouth, and a bell pepper stem on the Jack-O'-Lantern cheese.
  7. Spread 2 teaspoons of pizza sauce on each tortilla crust. Top one crust with 2 tablespoons of shredded mozzarella cheese. Leave the other crusts with just the sauce. Bake in the preheated 400°F oven for 6 minutes.
  8. Remove from the oven. Build the spooky spider on the pizza topped with shredded mozzarella. Place the other pizza toppers on the remaining pizzas. Return to the oven for 1 to 2 minutes, or just until the cheese starts to melt.
