These Easy Mini Halloween Pizzas are a fun and festive way to celebrate. Using flour tortillas as crusts, you'll create cute cheese cutouts like ghosts, a mummy, a spider, and a Jack-O'-Lantern. With a quick homemade tomato sauce and just a few ingredients, these pizzas are perfect for a Halloween party or a family movie night.

  1. Put the drained whole tomatoes in a food processor with a steel blade. Add minced garlic, 1 tablespoon olive oil, white wine vinegar, and dried oregano. Process until smooth, about 30 seconds. Season with salt and pepper to taste. This makes 2 cups of sauce.
  2. Preheat your oven to 400°F. Line a large rimmed baking sheet with non-stick aluminum foil and set aside.
  3. Cut six circles (4½ to 5 inches in diameter) from the flour tortillas. Brush both sides with 2 teaspoons olive oil. Cook them in a skillet over medium heat until golden on both sides, about 2 to 3 minutes per side. Place the browned tortillas on the prepared baking sheet.
  4. From one slice of mozzarella, cut three baby ghosts. From another slice, cut a friendly ghost. Use an egg-shaped cookie cutter to cut a Pac-Man ghost from a mozzarella slice, then cut a zigzag pattern from the bottom with kitchen shears. Cut thin strips from a mozzarella slice for the mummy pizza. Cut a Jack-O'-Lantern from the cheddar cheese slice.
  5. Make a spooky spider by slicing a black olive in half lengthwise. From one half, cut 8 legs. From the other half, cut 4 round eyes. Cut 8 small eyes for the baby and friendly ghosts and 1 smile from black olives. Cut eyes and a mouth for the Jack-O'-Lantern from mozzarella cheese scraps.
  6. Place 2 small black olive eyes on each baby ghost. Put 2 small black olive eyes and a smile on the friendly ghost. Add 2 sliced black olive eyes to the Pac-Man ghost. Arrange mozzarella strips on the mummy pizza and add 2 sliced black olive eyes. Place mozzarella eyes and mouth, and a bell pepper stem on the Jack-O'-Lantern cheese.
  7. Spread 2 teaspoons of pizza sauce on each tortilla crust. Top one crust with 2 tablespoons of shredded mozzarella cheese. Leave the other crusts with just sauce. Bake in the preheated 400°F oven for 6 minutes.
  8. Remove from the oven. Build the spooky spider on the pizza with shredded mozzarella. Place the other cheese toppers on the remaining pizzas. Return to the oven for 1 to 2 minutes, just until the cheese starts to melt.
