This simple recipe takes fresh pumpkin seeds from carving pumpkins and turns them into a savory toasted treat. Coated in butter, parmesan, and garlic salt, they bake quickly in the oven for a perfect Halloween snack. Store them in clean baby food jars for a fun, portable container.

  1. Wash the pumpkin seeds you've scooped out of any pumpkin and pat them dry.
  2. Warm up two teaspoons of butter until melted. You can use homemade butter if you like.
  3. Combine the seeds with the melted butter, a sprinkle of parmesan, and garlic salt according to your preference. Don't be shy with the seasoning.
  4. Arrange the seeds in a single layer on a greased baking sheet (I like to line mine with foil). Bake at 375°F for about 8 minutes. Keep an eye on them—when they start to pop, they're done. Pull them out before they burn. A little char is fine if you like that.
