These cinnamon sugar pumpkin seeds are a delicious snack made from fresh pumpkin seeds. After a quick roast to dry them, they're tossed in butter, vanilla, sugar, and cinnamon, then baked until golden. Perfect for fall snacking or Halloween parties.

  1. Set your oven to 300°F.
  2. Take the seeds out of the pumpkin and rinse them in a colander under cold water, removing any pulp. Spread the clean seeds on an unlined baking sheet.
  3. Bake the seeds until they are dry, about 30 to 35 minutes.
  4. In a medium bowl, combine the melted butter and vanilla extract. Drizzle this mixture over the seeds and toss to coat. Then sprinkle with sugar and cinnamon, and toss again.
  5. Return the seeds to the oven and bake, stirring once halfway through, until they are light golden brown, about 20 to 25 minutes.
