This Halloween party dish features black-dyed spaghetti topped with a rich, savory meat sauce studded with green olive 'eyes.' The ground beef is browned, then simmered with tomatoes and spices, while the pasta is colored with black food gel for a spooky swamp monster look.

- Set a colander in the sink and line it generously with paper towels.
- Place a Dutch oven or large saucepan over medium-high heat and add the ground beef. Season with 2 teaspoons salt and 1 teaspoon black pepper, then break it up with a wooden spoon or spatula. Cook until fully browned, about 10 minutes, stirring often. Remove from heat and transfer the beef to the prepared colander, pressing out excess grease. Carefully wipe down the inside and outside of the pot.
- Return the pot to medium heat and add olive oil. Once hot, add the diced onion and red bell pepper. Sauté for about 5 minutes, then add minced garlic and cook for 1 more minute.
- Add both cans of crushed tomatoes, tomato paste, sugar, 1½ teaspoons salt, and 1½ teaspoons black pepper. Stir to combine. Reduce heat to medium-low and simmer with the lid ajar for about 20 minutes, stirring often. Remove from heat and set aside.
- Bring a large pot of heavily salted water to a boil over high heat. Stir in the black food coloring, then add the spaghetti. Cook according to package directions and drain well. Transfer the spaghetti to a serving platter and top with the meat sauce. Slice the green olives into thick rounds and arrange them in pairs on top of the sauce. Serve immediately.
