Halloween Spaghetti Squash

This Halloween spaghetti squash is a fun and festive side dish. Roast the squash until tender, then fluff it into strands and season with garlic, oregano, and black salt. Serve it as a creepy but delicious addition to your Halloween feast.

- Heat your oven to 425°F. Meanwhile, line a jelly roll pan with foil.
- Carefully slice the spaghetti squash in half from top to bottom. Use a large metal spoon to scrape out the seeds and stringy pulp. Drizzle the inside of each half with olive oil—use no more than 1/4 cup total—and season generously with salt. Place the halves cut side down on the prepared pan. Roast for about 45 minutes, then remove and let cool until you can handle them comfortably.
- Once cool, take a fork and scrape the flesh to create spaghetti-like strands. Transfer the strands to a large bowl. Season with salt, garlic salt (or garlic powder), and white pepper to taste. Add about 1 teaspoon of oregano and toss everything together until evenly mixed. Divide into 4 portions and finish each with a sprinkle of black salt.
