These pumpkin gnocchi are tender and flavorful, paired with a rich gorgonzola sauce. The dish is finished with crunchy bacon, shallots, and sage leaves for a delightful texture contrast. Perfect for a comforting autumn meal.

- In a large bowl, combine the pumpkin puree and egg yolk.
- In another bowl, whisk together 2 cups of flour, salt, and nutmeg.
- Gradually add the flour mixture to the pumpkin, stirring until a soft dough forms that pulls away from the bowl. You may not need all the flour.
- Lightly flour a work surface.
- Knead the dough for 1 minute, then cut it into 4 pieces.
- Roll each piece into a log about 1/2-inch thick.
- Add more flour as needed to prevent sticking.
- Cut each log into 1/2-inch pieces.
- Gently roll each piece over the tines of a fork to create ridges.
- Place the formed gnocchi on parchment paper and repeat with remaining dough.
- Bring a large pot of salted water to a boil.
- Reduce the heat to maintain a gentle boil.
- Drop in the gnocchi, working in batches if needed.
- Stir once and cook until they float, about 4–5 minutes.
- Remove with a slotted spoon and transfer to a serving dish.
- While the gnocchi cook, warm the milk or half-and-half in a medium pot.
- Cook, stirring often, until it begins to thicken.
- Whisk in the gorgonzola, nutmeg, salt, and pepper.
- Remove from heat and whisk until smooth.
- Cook the bacon until crisp.
- Drain most of the fat, then lightly fry the shallot and sage leaves in the same pan.
- Drain everything on paper towels.
- Serve the gnocchi with the sauce and top with bacon, shallots, and sage.
- Serve immediately.
