This pizza recipe combines smoky mozzarella, crispy bacon, and roasted delicata squash on a garlic-infused crust. It's quick to assemble and bakes in just 10–12 minutes, making it a perfect weeknight dinner with seasonal flair.

  1. Turn the oven on and set it to 500°F. Take the delicata squash, cut it in half lengthwise, and scoop out the seeds and any stringy bits. Slice the halves into 1/4-inch-thick half-rings, discarding the stem ends. Arrange the slices on a baking sheet, drizzle with a little olive oil, and roast for about 6 minutes, until just tender and lightly browned. Remove from oven and set aside.
  2. In a small bowl, stir together the pressed garlic and 6 tablespoons of olive oil. Place the bowl on the stove to gently warm the mixture.
  3. Roll out the pizza dough on parchment paper into a 10-inch circle. Spread half of the garlic oil mixture over the dough, leaving a 1/2-inch border. Top with half of the smoked mozzarella, half of the crumbled bacon, half of the sliced red onion, and half of the roasted squash. Sprinkle a little dried oregano on top.
  4. Transfer the pizza (on the parchment) onto a pizza stone or baking sheet, and place it on the bottom oven rack. Bake for 10–12 minutes, until the crust is golden and the cheese is bubbly and starting to brown. Repeat with remaining ingredients for a second pizza.
