Colcannon is a traditional Irish dish often enjoyed on Halloween. It combines creamy mashed potatoes with tender cabbage, enriched with butter and milk. Serve it hot with extra butter on top for a simple yet satisfying meal.

Directions
- Put peeled and quartered potatoes in a large pot, cover with salted water. Bring to a boil, then lower heat and simmer for about 15 minutes until fork-tender.
- While potatoes cook, place the chopped cabbage in another pot with a small amount of water. Cook on medium heat for about 10 minutes until tender, then drain.
- Drain the cooked potatoes and return them to the pot. Add the butter and milk, then mash everything until smooth and creamy.
- Mix the drained cabbage into the mashed potatoes. Season with salt and pepper to taste. Serve immediately, topped with extra butter if desired.
