- In a small saucepan, combine 1 1/2 cups water and 1 1/2 cups sugar. Warm over medium-low heat, stirring occasionally, until the sugar is completely dissolved.
- Once the sugar is dissolved, stir in 1/3 cup pumpkin puree, 1 1/2 tsp cinnamon, 1 1/2 tsp nutmeg, 1/2 tsp ginger, and 1/2 tsp cloves. Keep the mixture at a gentle simmer over medium-low heat for 8–10 minutes, stirring often.
- Take the pot off the heat and pour the syrup through a fine-mesh strainer into a bowl or jar. Let it cool completely, then transfer to an airtight container and refrigerate.
- Warm 8 ounces of milk on the stovetop or in the microwave for about 1 minute. Use a milk frother to froth the heated milk until it's light and foamy.
- Place 2 tablespoons of the homemade pumpkin spice syrup into a large mug. Pour 4 ounces of strong coffee (such as Starbucks French Roast) and the frothed milk over the syrup. Top with whipped cream and a sprinkle of pumpkin pie spice.
