This Halloween meatloaf is shaped like a mummy and wrapped in bacon. It's made with ground beef, Parmesan, and a tangy brown sugar glaze. Perfect for a festive dinner!

  1. Heat your oven to 375°F.
  2. In a large bowl, combine ground beef, eggs, bread crumbs, Parmesan, tomato juice, Worcestershire sauce, salt, pepper, and minced onion. Mix just until incorporated, being careful not to overwork the meat.
  3. Line a rack with parchment paper or foil and place over a baking sheet. Poke holes in the paper to let fat drip away. Form the meat mixture into an oval or skull shape on the rack.
  4. Wrap the shaped meatloaf with bacon slices to create a mummy look. Use onion rings, olives, sliced garlic, and cherry tomatoes to make eyes and a mouth.
  5. Stir together brown sugar, ketchup, and mustard to make the sauce. Brush or drizzle it generously over the mummy.
  6. Bake for about 1 hour 15 minutes, until golden brown and the internal temperature hits 155°F on a meat thermometer.
  7. Let the meatloaf rest for 15 minutes before slicing and serving.
