This Halloween spaghetti squash recipe makes a fun and festive side dish. Roast a whole squash with olive oil and salt, then shred it into strands. Season with garlic, white pepper, and oregano, and finish with a dramatic black salt garnish.
Ingredients
Directions
- Heat the oven to 425°F.
- Slice the spaghetti squash lengthwise into two halves. Use a large metal spoon to remove the seeds and stringy pulp from the center. Drizzle the cut sides with olive oil (use up to 1/4 cup total) and season generously with salt. Arrange the halves cut-side down on a baking sheet lined with foil. Roast for about 45 minutes, then take out and let cool until you can handle them comfortably.
- Use a fork to scrape the squash flesh into strands and transfer them to a big bowl. Add salt, garlic powder (or granulated garlic or garlic salt), and white pepper to taste, along with about 1 teaspoon of oregano. Toss everything evenly. Divide into four portions and top each with a sprinkle of black salt.
