Roast delicata squash halves until tender, then fill with a smoky chorizo, black bean, and rice mixture. Top with cheddar cheese and bake until melted. Garnish with fresh cilantro and serve with salsa and sour cream for a complete meal.

  1. Preheat the oven to 375°F. Lightly oil a large baking dish or rimmed sheet. Place the halved delicata squash cut side down and roast until fork-tender, about 20 minutes. Remove from oven, flip over, and increase oven temperature to 400°F.
  2. While the squash roasts, warm about 1 tablespoon olive oil in a skillet. Add the chorizo, diced red onion, minced jalapeño, and garlic. Cook, stirring often, until the vegetables soften. Stir in smoked paprika, drained black beans, and cooked rice. Heat through, then season with salt and pepper. Remove from heat and mix in minced cilantro.
  3. Spoon the filling into the baked squash halves. Top each with grated white cheddar cheese. Bake at 400°F until the cheese melts, about 5-7 minutes. Garnish with extra cilantro and serve with salsa and/or sour cream if desired.
