This recipe turns a medium pumpkin into an edible casserole dish. A savory filling of ground beef, rice, mushrooms, and water chestnuts is seasoned with soy sauce and brown sugar, then baked inside the pumpkin until tender. The result is a stunning centerpiece that serves 6 to 8.

  1. Set the oven to 350 degrees Fahrenheit.
  2. Rinse the pumpkin, slice off the lid, and scoop out the seeds and stringy insides.
  3. In a big skillet, cook the ground beef until browned, then pour off the grease. Add the chopped onion and minced garlic and cook until softened. Toss in the mushrooms and sauté until they are tender.
  4. Stir in the soy sauce, brown sugar, cream of chicken soup, cooked rice, salt, pepper, and water chestnuts. Combine everything thoroughly.
  5. Fill the pumpkin shell with the mixture. Put the top back on and set the pumpkin on a baking sheet lined with foil. Bake at 350°F for 1 hour and 30 minutes, or until the pumpkin is soft.
